The name means the gold of Bar, and the Martinović family has pressed it through their company Barska uljara since 1998, on a long family line of olive growing. The oil comes from Žutica, the autochthonous variety cultivated around Bar since ancient times, harvested at optimal ripeness and cold pressed by mechanical extraction alone in the family's modern mill at Belveder.
The range extends from a hand-harvested Special Edition, released in limited series and presented in an olive-wood box made from the by-products of regenerative pruning, to standard extra virgin in 750, 500 and 250 ml, virgin oil, and oil infused with St. John's wort. The extra virgin has carried the national Dobro iz Crne Gore quality mark since April 2022. There is no online shop or published retailer list; buyers contact the family directly.
A bottle of Barsko zlato makes a Montenegrin gift because it has a name and an address behind it. The Special Edition is presented in an olive-wood box, each one different in grain, while the standard extra virgin is available in matt or gloss presentation boxes in three sizes, as a single bottle or a case.
At the table, it belongs beside simple food. Žutica yields an oil that is fruity, peppery and firmly bitter, most expressive over grilled fish, young cheese, bitter greens and warm bread, poured at the last moment and never heated. A 250 ml bottle suits one long dinner among friends.
